Though my son has a condition called eosinophilic esophagitis (EoE) that causes his immune system to rebel against many food proteins (including milk, eggs, wheat, soy, rice, oats, beef, pork, chicken, apples, and coconut), we as a family all eat the same 'limited' diet and we still find delicious ways to do it. With EoE, sometimes the children are allergic to so much that they must be tube fed a special formula, but I have seen more than one occasion where a child having only as many or FEWER allergies than my son is tube fed because their parents (understandably) could not find enough 'safe' foods to feed their child to sustain them. I'm here to show that there is still a whole world of safe food! Even if these recipes are not, as authored, exactly to your tastes or needs, most are easily adaptable and the attitude that multiple severe allergies doesn't have to ruin your life is one size fits all. |
