The difference between us and them is that lions, tigers and bears along with other born carnivores do not have a choice. They’re built to hunt, to kill and to eat meat. Their bodies grow and thrive on it. Humans have a choice about what they put in their mouths. Our bodies thrive on a whole food, plant-based diet. Fruits, vegetables and grains give us all of the protein, fat, carbohydrates and nutrients that we need. Our livers are not meant to process high amounts of cholesterol – the high amounts found in meat. Many of us have big problems digesting dairy products. Bovine milk is meant for calves, not humans. We have big, flat molars with which to grind plant matter. Think those canines are for ripping and shredding flesh? Try this: find the nearest (live) cow and try to sink your teeth into her. (Watch that rear leg left hook – it’s a doozy.) If that sounds extreme, you could first try chomping into your leather shoe.
Some days it feels to me as if we are reaching a tipping point, that more and more people are taking an interest in their health, are seeking nutrition-based alternatives to prescription medications and surgical procedures and also want to stop being a link in the horrendous animal-as-food chain. And then I run across an article or a TV show or a cookbook that makes me think that instead we are sliding, knives poised, backwards.
