Phat Wraps: A Green and Healthy Approach to Fast Food

Located on High Street, near Ohio State university’s main campus in Columbus, is the small yet remarkable eatery called Phat Wraps which opened for business about a year ago.

Jose Becerra, the owner, executive chef, and concept developer of the restaurant, says in an interview that his fresh new approach to healthy fast food was inspired by the lack of restaurants that offer healthy, simple, yet delicious foods.

Being an executive chef for years and with his extensive experience in the culinary arts, he says that it takes about 18 months before a restaurant begins to make a profit, but though he’s not yet raking in significant profits, he is excited that customers enjoy his food and that many repeat customers return for his unique concept of make-it-yourself wraps. Although his specialty is French cuisine, his eatery allows customers make any kind of wrap they desire.

For those uninitiated, his menu provides two types of bread: wheat and buckwheat. The latter offers a welcomed option to those who suffer from gluten allergy or sensitivity.

After deciding on the bread, customers select a protein from three options: chicken, steak, and organic tofu. All are deliciously season with sea salt, pepper, and of course, his own blend of red “secret” spices. He then grills to perfection the bread and protein, and the delectable lot is ready for fixings.

Once customers get the bread and protein, they proceed to construct the wrap of their dreams. The sauce “bar” has everything from olive oil, balsamic vinegar, chili sauce, barbecue sauce, Worcestershire sauce and much more.

For those who don’t want prepacked sauces and want a more sophisticated homemade sauce, Jose offers his very own creation: spicy mayo and hot sauce, and these have real fire in them besides being totally mouth watering.

The “Phat Bar” offers fresh veggies. In addition to the usual suspects of julienne carrot, red cabbage, onions, and chunks of cucumber, tomato, red pepper, lettuce, and whole-leaf spinach, customers with a more spicy palate can choose sliced jalapenos, sprigs of fragrant cilantro and Thai basil.
