Hello, my name is Pat Rinaldo and I am the author of the Chuckling Pig blog. I have always enjoyed food and I grew up with a wonderful combination of flavors that fed my love of cooking. My father lived in Italy until he was in his twenties. My mother was a Midwesterner who loved hamburgers, french fries and anything else that she could get at the local diner. Our house was filled with a mix of these flavors and my cooking style is a blend of both my parents. In our house, many of our meals are still the Italian dishes that were passed along from my father or my uncles. However, I have added many other things to my collection over the years. My wife is from an Irish-Lebanese background and my father-in-law has been very generous with his Lebanese recipes. I have also added many dishes to my arsenal that I would classify as “diner cooking” and these are the recipes that will be the focus of this blog with a few of the ethnic dishes thrown in for good measure. I am not a chef, just a home cook who enjoys eating and talking about food. I started this blog to learn more about a style of cooking that I enjoy and to share what I learn with others. Hopefully, some of you will enjoy these recipes and commentary and if not, maybe you’ll have a few suggestions that will help me improve. Thank you in advance for your patience and patronage.
