Jerk Chicken Casserole Recipe

for the 2 lovely ladies who commented on my last blog, here is my recipe as requested... Marinate lots of pieces of free range chicken on the bone e.g thighs and drumsticks in Dunn's River Jamaican Jerk Seasoning (comes in a moist paste), fresh lime juice, salt, black pepper and cloves of peeled garlic. Leave overnight. ooh and virgin olive oil. mix it all around with your hands. Pan fry the chicken pieces in virgin olive oil (infused with chillies) until the skin is golden brown. Peel & chop sweet potatoes into big chunks, can add chunks of carrots too.
