Back in 2004 I tried a Polynesian grilled chicken dish. I remember liking it but never made it again. I don’t know why. The other day I was thinking about it because I had fresh herbs, chicken, peppers and onions so I decided to make it again. Dallas made rice (he always makes the rice) and we ate them together.

I confess. I ate the photo shoot. I made a huge salad this afternoon, drizzled it with Green Goddess Dressing and proceeded to devour it. The food prepared for photographing was instead inhaled. As in, scarfed immediately. Now normally, I’m a fairly disciplined person, so this was a bit odd.

I have recently come to the conclusion that I am the quintessential Copy-Cat and I’m OK with that. The ho-humdrums of “What’s for dinner?” are no long a part of my daily existence, my family is experiencing new flavors while being well-fed and I look forward to making dinner instead of seeing it as the last task of my already busy day - aaaah, bliss.

I love miso for it's patience. It's one of those ingredients that can sit in the back of the fridge and just wait until you remember it's there. It is quiet and strong all at once and I always feel that when I add it to a dish, I'm becoming a much better person because all of those qualities will be transfered onto me inside of a delicious little bundle of pure wholesome goodness.

After writing about breakfast items like poached eggs and biscuits, I figured a hearty dinner recipe was more than required. I had a good one all lined up too because last week I had a little dinner party and made a pretty amazing eggplant dish...and I don't even really like eggplant.
