The freeze dried Acai berry is most often utilized in Acai berry supplements by being ground into powder and then put into capsules. The process by which the freeze dried fruit is made is first freezing it to crystallize the moisture inside, and then subjecting it to low level heat to aid in the evaporation of the moisture.

Freeze drying the Acai helps it to maintain its nutritive content and keeps it from growing bacteria that causes food to rot. Having undergone freeze drying, the Acai berry can then be preserved for a remarkable length of time.

It should be noted that the Acai berry contains only about a 10% edible portion, the remainder being seed. Only the Acai skin and pulp have been adequately studied for their health benefits; however, some companies selling Acai berry supplements crush the seed and add it as filler. Even moreso, other companies use the spray dried Acai berry to fill their supplement capsules, a process by which the fruit is heated to very high temperatures, ruining a great deal of its nutritional value.
