Vegetarian is a lifestyle choice revolving primarily around eating plant-based foods to the exclusion of meat for reasons that include health, respect for animals, and concern for the environment. A vegetarian might consume some animal products, but nothing with “legs.”

There is a growing awareness that producing animals for food has environmental implications. With the growing awareness around eco implications, societal response now commonly promotes vegetarian philosophies on t-shirts and bumper stickers.

A recent book, The China Study, perhaps unintentionally backs the long held idea by vegetarians that a meatless diet may have health benefits. Results of a 35-year study of 8,000 people in China in 65 counties, tells how degenerative illness was virtually reversed or eliminated with a maximum of 7% animal foods in the diet.

For those seeking to test out or expand their vegetarian lifestyle, there are many recipes from simple to complex, to tempt the palate.
