Cacao is product that is manufactured from the beans of the Theobroma Cacao tree. The beans are put through a process of fermentation, and then the oils are extracted, leaving only the solids, which is commonly just referred to as "cacao", or cacao powder.


Physicians have found that its characteristic flavonoids are indicative of health benefits, which are optimized by using raw cacao recipes, which preserves the greatest amount of available nutrients.


While the heavily processed 'chocolate' still retains some benefits, research indicates that cacao solids, rather than oils, have more benefit, making homemade hot chocolate a healthier choice than a chocolate bar.
