Calories are units of energy. To be exact, it's the amount of energy that is required to raise the temperature of one kilogram of water by 1 °C. Typically it is used to count the amount of energy in a food source.
When organic compounds, like carbohydrates and proteins, break down during digestion, they release this energy. Because a raw food diet eliminates refined and processed energy sources, which aren't naturally occurring, adherents are left without the normal restrictions of weight-loss dieting. In the raw foods diet, calories are thinned out with natural fibre, and these foodies will be satiated far before they've reached the upper limit of caloric intake.
