Today is a my mom-in-law's b'day and I wanted to do something for her that would be meaningful to both of us. Before I go any further I have to say how lovely she is to me, like my own mom :) She is an amazing cook too and this is one of the first recipes I learnt from her since TH loves it.

According to researchers, people who have suffered a stroke can be benefited by a chemical found in soybeans and chickpeas. The researchers from the University of Hong Kong say that the treatment effect of the chemical isoflavone can be compared to statin drugs that are used to bust cholesterol.

This bean salad contains lots of chickpeas, is super-easy to make, and ridiculously healthy. There's no oil, but that's okay because the fresh ingredients offer all the flavor you need.

I had a ton of pasta sauce leftover from Friday night's dinner, but I really wasn't feeling like eating pasta tonight -- I've come down with the cough that all of my little folks at work have, and soup sounded MUCH better.

The other day I posted a roasted ratatouille recipe I adapted from Chocolate & Zucchini. This prompted Tim to ask: “isn’t that copyright infringement”? Huh. Call me a crap creative, but that thought had not occurred to me. “Naaaah,” I said. I altered the ingredients and directions slightly, plus I gave credit to C&Z.

I like the idea and taste of this dish, but the execution/method needs work. I envisioned a creamy stew with a lemony zing complemented by the unique flavour of dill. As far as taste goes, everything worked. The potatoes and asparagus blended well with the spices, while the chickpeas provided an earthy undertone (and the tofu packing an extra protein punch).

I constructed a little "falafel bar" for Dan and I for dinner tonight:Cucumber, tomato, lettuce, red onion, feta, and olives, andfalafel patties, tahini-yogurt sauce, and homemade pita!!Why is it that homemade bread seems to be the one thing that really makes a meal??? These pita were AWESOME! I used a recipe from Fine Cooking magazine.
