cinnamon

Cinnamon is a spice made from the dried interior bark of cinnamomum zeylanicum, or cinnamomum verum which is grown mainly in Sri Lanka. Preparation of the spice is a complex process involving stripping, peeling, and sun-drying of the bark. The spice is then sold as sticks, or ground into a powdered form that most people are familiar with. In the West, cinnamon is commonly used for many sweet dishes. However, in many Asian and Middle-Eastern cuisines cinnamon is also added to savory dishes and meats. Cinnamon has also gained popularity recently for the possible health benefits of the spice. In Ayurvedic medicine, cinnamon is used as a remedy to treat diabetes, indigestion and colds. Western medicine has also been investigating the effects of cinnamon on blood sugar. A number of studies have also explored the anti-bacterial and anti-fungal qualities of the spice. Cinnamon is also sometimes used as a weight-loss supplement.
