garlic
Garlic (allium sativum) is a part of the onion family (allium) that also includes chives. It is one of the oldest herbs that is found as part of human cuisine with usage dating back 4-6000 years. Because of this, garlic is used heavily in many of the world's cuisines. It is a staple of Mediterranean, Indian, and Asian cooking. The flavor of garlic is used to enhance many dishes, including rice, pasta, curries, stir fry, vegetarian dishes and many more. A number of sub-varieties are also used in cooking, such as elephant garlic (actually a leek), 0phioscorodon types. Garlic can come as fresh bulbs, small dehydrated chips, powder, fermented (black garlic), or as a paste usually preserved in oil, or water.
