Hosta ‘Key Lime Pie’ is in one of my favorite spots in the garden, at the top of the pond where the water is pumped out for the stream. KLP is a sport of Squash Casserole, has brilliant, rippled and ruffly leaves that emerged bright green with a creamy white border appearing as the plant unfurls.

Make this super easy & cool Key Lime Pie for summer and let it melt in your mouth!  This recipe actually calls for 6 miniature graham cracker pie shells but since I didn’t have those, I just used a regular single graham cracker shell.  It worked out the same so no biggie.

I’ve made my version of the Key lime pie several times and it has always been a success: it’s quite easy to make, and the silky soy whip filling is just heavenly. This recipe is just one of many versions - I’ve used soy cream cheese instead of the soy whip and added more yogurt, and I’ve even made this with a mix of soy vanilla sauce and soy yogurt with excellent results.

Now where on this pyramid should the daily gin & tonic requirement go? Hmmm... perhaps at the bottom, expanding the pyramid base? Is that doable? ;) This post in inspired by Passionstamper in response to her description in comments of my "behavior" the other day pre and post exam..
