  Sheilding helps reduce RFI type noise from TVs, florescent lights, etc... but I dont think it can keep out the 60 HZ hum from A/C power. I am no expert so I could be wrong.

  To do the B5 wiring, you need: 3x 4 wire HB 1x normal 5 way strat switch 1x 4PDT toggle 1x 1PDT toggle (or a push-pull pot) I believe you have all of the above except if you want to use a push-pull instead of the toggle (push-pull is a better option).
