Raw milk is milk that hasn't been pasteurized, process used to kill pathogens such as bacteria viruses and micro-organisms. Supporters believe that dangerous pathogens are the product of unnecessarily unclean husbandry practices, and humane care of cattle fosters environments that render pasteurization unnecessary.

All milk was consumed raw before 1900 when germ theory was validated by advances in science. Raw foods are meant to preserve the greatest number of enzymes and beneficial compounds that can break down when heated. In this instance, raw means not heated beyond the point of destruction of those enzymes.

Researchers believe that the human digestive system is better adapted and designed to process raw foods, and that individuals who subscribe to the raw foods diet are exposed to more ideal nutrient levels.
