Salsa at the most simple level means sauce in Spanish. However, in world cuisine, it has come to mean any spicy vegetable-based sauce used to dip chips and other finger foods. Popularized in the United States with the rise of Tex-Mex cuisine in the 1990's, people often associate salsa with Mexican pico de gallo. The various types of salsa include salsa roja (red salsa), salsa verde (green salsa), salsa cruda (raw sauce), salsa negra (black sauce), salso taquero (taco sauce), salsa ranchera (ranch syle sauce). Apart from the traditional, there are many modern variations, such as salsa cuervo, chipotle salsa and even pineapple salsa.
