A Quick And Easy Vegetarian Supper

So, I’m a vegetarian and luckily for me I love cooking, trying out new recipes and inventing tasty suppers. Sometimes though you just need a quick fix; you know how it is, you’ve had a busy day and you just want to come home and munch, preferably on something carb based!
Why not give this quick recipe a go, we have it at least once a week and it always goes down well. It’s simply called pasta with chilli and garlic or as the Italian’s beautifully call it, spaghetti aglio, bueno!
Easy peasy ingredients:
8oz of spaghetti or linguini – add more if you are hungry!
4 tablespoons of olive oil
2 garlic cloves – the bigger, the better
1 red chilli – go as hot as you dare
Salt and Pepper
Optional – a smidge of grated lemon rind
Even easier instructions:
All you do is put your pasta on to boil in the usual way whilst heating the olive oil gently in a pan.
Slice your garlic cloves and red chilli, and add them to the heating oil.
They should pretty soon start to heat and diffuse their flavor into your oil and the kitchen should start to smell heavenly. Don’t cook for too long and keep an eye on it as you don’t want to burn your garlic.
When your pasta is cooked, drain and return to the pan and pour in the hot oil mixture.
Mix well and serve with a nice side of rocket, lashings of salt and pepper and a bit of grated lemon rind if you like that kind of thing.
