Bring Back Dinner Time with Five Easy Kid Dishes

Dinner time can be very frustrating for everyone, especially when children are involved. Children are notorious picky eaters, but there are options out there that don’t have to be difficult. Everyone will be pleased, even you. Shouldn’t we all sit down together as a family? It’s good for us. In this Forbes article, we are led to believe that sitting down together as a family is punishment for everyone. Not in this house.

Keeping a refrigerator and pantry stocked with the recommended grocery list will make life much easier. These items can be used to make the five kid-friendly dishes (see below). Most of the dishes are healthy and don’t break the bank.

Sloppy Joes
Grocery List:
Flour tortillas-fajita size
3 Cups Shredded Monterey Jack cheese
2 tomatoes
2 onions
1 T fresh cilantro
2 garlic clove
1 avocado
1 lime
1 box whole wheat angel hair pasta
1 (14.5 oz) can petit diced tomatoes
2 (6 oz) can tomato sauce
1 (4 oz) can tomato paste
Demi-loaf artisan bread
2 cans black beans
Mini sweet dinner rolls
1 lb ground turkey
1 C pork, cooked and diced
4 C rice, cooked and cold
1 bunch scallions
1 ½ c frozen peas and carrots

The items below should always be on hand. As soon as you run out of any of these, add them to your grocery list.

What You Already Have:
Non-stick cooking spray
2 eggs
Chicken bouillon cubes
olive oil
soy sauce
water
1 T grill seasoning
brown sugar
Worceshire sauce
3 T mayo
2 tsp dried Cumin
1 tsp dried parsley
Dash of cayenne pepper
1 tsp dried Oregano
Vegetable oil
1 tsp Italian Seasoning
Salt and pepper

As long as you stick to this list, you don’t have any reason to stress out. The next five recipes take less than thirty minutes and require little maintenance. Your kids will be happy and you will be too.
Skip the drive-thru and make one of these:
1) Quesadillas with Salsa Fresca and Guacamole
2) Whole Wheat Pasta with Homeade Marinara and bread
3) Veggie Burgers w/Sweet Potato Fries
4) Turkey Sloppy Joes w/Steamed Broccoli
5) Fried Rice

How To Make:

1) Quesadillas with Salsa Fresca and Guacamole

Spray skillet with cooking spray. Heat over medium-high heat. Add flour tortilla. Sprinkle one half of tortilla with desired amount of cheese. Fold over. While quesadilla cooks, chop tomato, ½ medium onion, cilantro and add to small bowl. Sprinkle with salt and pepper. Drizzle in 2 T olive oil and mix well. Set aside. Flip quesadilla. Cut avocados in half. Remove pit. Scoop out fruit and transfer to small bowl. Add 1 T of salsa fresco to bowl. Squeeze juice of ½ lime and mix in ½ clove of garlic. Transfer quesadilla to plate. Serve with salsa and guacamole.
